Food Defense and Fraud and Vulnerability Assessment plus Allergen Control Course

Food Defense and Fraud and Vulnerability Assessment plus Allergen Control Course
Principle and Rationale
EQA recognizes the importance of protecting food safety throughout the supply chain. Food manufacturing sites today need a system for assessing and controlling the risks that may arise from threats both outside and inside the organization. The key areas are Food Defense, Food Fraud and Allergen Management, as required by international standards such as FSSC 22000, BRCGS for Food Safety and for Packaging Materials, ISO 22000 and the Codex GMP and HACCP.
For Food Defense and Food Fraud, the organization must assess the risks of intentional contamination and of food adulteration or counterfeiting, and follow relevant intelligence, in order to set control measures appropriate to the level of risk. At the same time, allergen management is a key requirement in both legislation and certification standards, and must be controlled from raw materials through production to correct labelling.
Course Objectives
- To enable participants to understand the meaning and principles of Food Fraud, Food Defense and Allergen Management and to set appropriate control measures
- To enable participants to assess food fraud and adulteration risks and vulnerability in the supply chain, and to set control measures systematically
- To enable participants to understand the types of food defense threats and to assess the risks and set preventive measures throughout the production process
- To give participants the knowledge and approach needed to manage allergens in accordance with the relevant legal and standard requirements
- To enable participants to apply this knowledge through workshop activities and adapt it effectively in their organization
