Food Defence, Food Fraud and Vulnerability Assessment Course based on PAS 96:2026
Principle and Rationale
Food, drink and the food supply network can be targets of deliberate acts: intentional contamination to cause harm, cyber attacks that disrupt business operations, and adulteration or counterfeiting for economic gain (food fraud). These affect consumer health, cause business losses and damage the reputation of the organization.
PAS 96:2026 Food defence - Protection and prevention from deliberate acts - Guide, which came into effect on 31 May 2026 and replaces the 2017 edition, gives guidance on Threat Assessment Critical Control Point (TACCP) following the Plan-Do-Check-Act cycle. It covers setting the scope, identifying threats and vulnerabilities, assessing risk, selecting mitigation measures, responding to incidents, and reviewing and continually improving the plan, together with cyber security, the insider threat and food protection culture.
This course is designed to help participants understand PAS 96:2026 and use it to prepare or review the food defence or food protection plan and the food fraud vulnerability assessment, in line with food safety standards such as the BRCGS Global Standard for Food Safety, FSSC 22000 and ISO 22000.
Course Objectives
- To understand the scope, key terms and definitions of PAS 96:2026, including the changes from the 2017 edition
- To identify the types of threat and the threat actors relevant to the participant's business
- To apply the TACCP process within the Plan-Do-Check-Act cycle and assess the risk from threats and vulnerabilities systematically
- To select suitable mitigation measures covering physical access, process, technology, product, tamper detection and personnel security
- To plan the response to incidents, including cyber incidents, and business continuity
- To review, scan the horizon for new information and continually improve the food protection plan
